Just in time for the holidays, MR PORTER spends a day in the kitchen with perhaps the greatest chef in the world, Mr Daniel Humm, as he readies his new restaurant Davies and Brook for its opening in legendary London hotel Claridge’s. Along the way, Mr Humm shares some of his hard-won wisdom on creating a festive environment for a diner, his pursuit of restraint and his famous duck, which he calls the only perfect recipe.
